PRODUCTION ZONE: This wine is produced our vineyard situated on the hill LA SANTISSIMA in GUSSAGO (about 270 metres high). The production of grapes is 40 ql. per hectare.

VINE E VINIFICATION: The Franciacorta D.O.C.G. Brut stems clonal selections of Chardonnay grapes. At harvest, the grapes are handpicket and placed into small boxes. Then, the whole grapes undergo a very slow and soft pressing. Fermentation occurs at controlled temperature (17 - 19 degrees) with indigenous yeast in order to maintain the flavours and the aromas of Franciacorta. After the fermentation, the wine matures in stainless steel tanks. In March and April the wine is bottled and the process to induce the sparkling takes place; Then the bottles are stored in rooms at controlled temperature (12 - 14 degrees) for at least 36 months. After that period, the Franciacorta D.O.C.G. Brut presents its particular flavour and aroma, together with the finest perlage. The wine is then ready for the final stages: remuage, degorgement and labelling.

ORGANOLEPTIC CHARACTERISTICS: The colour is yellow with green reflections. The perlage is very fine and persistent. The bouquet is delicate and compact, followed by a dry taste and the distinctive finish of its full flavour.

ALCOHOL CONTENT: 12 - 12,5% vol.
