The fact that we have what it takes to produce truly great red wines have been proven by our winemaker in the form of this vintage Cabernet, which is part of the St. Valentin range. Delicately matured in small oak casks, this Cabernet comes in a mature ruby colour. Its dense, aromatic diversity is characterised by fruity aromas, ripe wild berries, vanilla and liquorice. Smooth, velvety tannins, delicate scents of cocoa and stewed fruits combined with a characteristic structure and density delight the palate and promise a variety of surprises and a pleasant taste. Proper ageing in the bottle allows this still young wine to intensify its pronounced complexity even further. The Cabernet St. Valentin is an excellent accompaniment to strong red meat dishes the barbeque, to game and lamb and to piquant varieties of cheese.
VINEYARDS: Best vineyards in Cortaccia and Caldaro The vines are 15 - 20 years old. Chalky and loamy soils.
VINIFICATION: Fermentation in stainlees steel tanks, after the fermenta - tion the wine stays in barrique / tonneaux for about 12 months.
