V I N I F I C A T I O N
Variety: 100% Pinot Noir
Wine making: Cold maceration for 5 days at 2-4 °C followed by open vat spontaneous fermentation with maceration twice a day for 3 -4 weeks.
Vinification: Acid reduction and natural sedimentation in stainless steel tanks followed by ageing in 500 l tonneau (30% new wood ,70% 2nd-3rd layers) for 14 months.
T A S T I N G N O T E S
Colour: juicy ruby red with garnet glints.
Fragrance: A very fine fruity bouquet with scents of wild berries and cherries. Mild spicy-herbal nuances with a smoky touch.
Taste sensation: Elegant and filigree in the drink, balanced sweetness-acidity ratio, pleasant spicy-mineral perception with a juicy and long-lasting finish.
Food recommendation: This wine is an excellent accompaniment to game dishes, lamb, rabbit and hard cheeses.
